Take a large bowl and tear the bread slices into the bowl. Add all the ingredients along with the base contents. Then mix them to combine with a spoon or with your hands.  Roll the mixture into meatballs of a size smaller than a golf ball. The quantity taken here can yield up to 40 meatballs. Season the meatballs with salt and pepper. Then place them on a plate or a baking sheet. Keep them in a refrigerator for one hour before starting cooking, to set them into the ball shape. Preheat the griddle on medium flame. Then keep the chilled meatballs on the preheated griddle. Not to be overcrowded. Leave space in between. Cook the meatballs until they start releasing from the griddle. The meatballs become brownish, and the crust is developed. Flip them with a suitable wooden spatula, and cook for some time until the balls are cooked completely. As the meatballs are cooked, they start to crust up. That time you can stop cooking otherwise the meatballs will be burnt. Remove them from the griddle and keep them for cooling. Either spread them into a plate or keep them on a wire cooling rack. Get it completely cooled before serving.

  • Sliced white bread (2)
  • Ricotta cheese (¾ cup)
  • ¼ cup Fresh parsley (chopped)
  • 5 Fresh Basil leaves (chopped)
  • Grated Pecorino romano cheese (½ cup)
  • One head of roasted garlic
  • Pepper as required

  1. Make the Meatballs mixturewith the base items
  2. Roll the meatballs and refrigerate for one hour

  4. When the grilled meatballs are cooked through, transfer to a plate to cool before serving.


Parmesan cheese can be used if you like the taste. Instead of transferring the cooked meatballs to a plate or baker’s rack to make them cool, you can transfer them into a saucepan if you like to taste the meatballs with sauce and keep them in the freezer. After freezing, reheat it before use. Also evaporated milk and red sauce can be added to get perfectness.

Step 1:

Take a large bowl and combine the ingredients of the meatball. Mix them with your hand or a spoon to combine them well.


Roll the mixture into balls that are equivalent to a golf ball. Season with salt, and pepper. Then keep them in the refrigerator for one hour before cooking. Then you have to flip the meatballs to get the other side of the ball cooked with a proper spatula. It is safer to use a wooden spatula. The time to flip the meatballs depends on the temperature of the griddle, the outside temperature, and the size of the meatballs prepared. You can flip them when it starts releasing from the griddle. The flipping should be carefully done with the spatula, as the ingredients should not be wasted on the griddle. After the second side is cooked, flip multiple times to get the meatball cooked completely.

Step 4:

After the cooking, transfer the meatballs from the grill to a plate and keep them on the baker’s rack to get them cooled before serving. Let it sit for some time so that the ingredients stay together while serving, otherwise, the shape will be lost if the ingredients are spread apart.
